Sourdough
Starter
- 1 cup flour
- 1 cup water or beer
- Mix & leave in warm place, covered
- Feed with 1 cup of flour & 1 cup of water for 3-5 days or until sour smelling and bubbly.
Bread
- 1 kg flour
- 700 ml water
- 400g of starter
- 2 tsp salt
- Mix flour, water & starter (but not salt) in a bowl for 15-20 mins
- Add salt at the end, cover and let stand for 1-2 hours
- Divide into 3 and knead with extra flour on a board and leave to rise again in bread bin or on baking tray with flour.
- Preheat oven to 275/300° C
- Cook for 20 min or until done
White loaf/Pizza base
- 2 packets yeast
- 2 tbsp sugar
- 650 ml tepid water (run tap over the underside of your wrist; it should feel neither hot nor cold)
- 2 tsp salt
- 1 kg flour
- Mix water, yeast & sugar until dissolved, then leave covered in a warm place for 15-20 mins or until foamy
- Add flour and salt and knead vigorously for 10-15 minutes or until soft & elastic
- Leave covered in a warm place again to rise
- Punch down the dough and leave to rise again
- Place dough in greased or floured tray or bread tin, shape and bake at 220 deg C
