Sourdough

Starter

  • 1 cup flour
  • 1 cup water or beer
  1. Mix & leave in warm place, covered
  2. Feed with 1 cup of flour & 1 cup of water for 3-5 days or until sour smelling and bubbly.

Bread

  • 1 kg flour
  • 700 ml water
  • 400g of starter
  • 2 tsp salt
  1. Mix flour, water & starter (but not salt) in a bowl for 15-20 mins
  2. Add salt at the end, cover and let stand for 1-2 hours
  3. Divide into 3 and knead with extra flour on a board and leave to rise again in bread bin or on baking tray with flour.
  4. Preheat oven to 275/300° C
  5. Cook for 20 min or until done

White loaf/Pizza base

  • 2 packets yeast
  • 2 tbsp sugar
  • 650 ml tepid water (run tap over the underside of your wrist; it should feel neither hot nor cold)
  • 2 tsp salt
  • 1 kg flour
  1. Mix water, yeast & sugar until dissolved, then leave covered in a warm place for 15-20 mins or until foamy
  2. Add flour and salt and knead vigorously for 10-15 minutes or until soft & elastic
  3. Leave covered in a warm place again to rise
  4. Punch down the dough and leave to rise again
  5. Place dough in greased or floured tray or bread tin, shape and bake at 220 deg C
