Pita bread

Ingredients

  • one packet dried yeast
  • 280 ml warm water
  • 1 1/2 tsp sugar
  • 3 cups flour
  • 1 1/2 tsp salt

Method

  1. In a large bowl, mix yeast, warm water and sugar and let sit for 10 minutes until foamy
  2. Combine salt and flour, stir into yeast water, 1 cup at a time and mix
  3. Knead on lightly floured surface until smooth and elastic, adding extra flour if too sticky
  4. Move dough to lightly oiled bowl, turning until covered with oil. Cover with a cloth and let rise until doubled in size (approx 1-1 1/2 hours)
  5. Punch down dough and knead out air bubbles, then divide into 8. Shape with hands or roll into 6 inch circles, set aside on a lightly floured counter, cover with cloth, and let rise for 30 minutes.
  6. Preheat oven to 260°C and place several pitas on wire rack on top of an oven rack. Bake 4-5 minutes or until puffed and top begins to brown. Place cooked pitas in a sealed paper bag or cover with a damp cloth to keep from drying out as the others cook.
