Pita bread

Ingredients
- one packet dried yeast
- 280 ml warm water
- 1 1/2 tsp sugar
- 3 cups flour
- 1 1/2 tsp salt
Method
- In a large bowl, mix yeast, warm water and sugar and let sit for 10 minutes until foamy
- Combine salt and flour, stir into yeast water, 1 cup at a time and mix
- Knead on lightly floured surface until smooth and elastic, adding extra flour if too sticky
- Move dough to lightly oiled bowl, turning until covered with oil. Cover with a cloth and let rise until doubled in size (approx 1-1 1/2 hours)
- Punch down dough and knead out air bubbles, then divide into 8. Shape with hands or roll into 6 inch circles, set aside on a lightly floured counter, cover with cloth, and let rise for 30 minutes.
- Preheat oven to 260°C and place several pitas on wire rack on top of an oven rack. Bake 4-5 minutes or until puffed and top begins to brown. Place cooked pitas in a sealed paper bag or cover with a damp cloth to keep from drying out as the others cook.
