Sourdough

Starter
- 1 cup flour
- 1 cup water or beer
- Mix & leave in warm place, covered
- Feed with 1 cup of flour & 1 cup of water for 3-5 days or until sour smelling and bubbly.
Bread
- 1 kg flour
- 700 ml water (try to get water at body temperature by running tap on underside of wrist until it feels neither hot nor cold)
- 400g of starter
- 2 tsp salt
- Mix flour, water & starter (but not salt) in a bowl for 15-20 mins
- Add salt at the end, cover and let stand for 1-2 hours
- Divide into 3 and knead with extra flour on a board and leave to rise again in bread tin or on baking tray with flour.
- Preheat oven to 275/300° C
- Cook for 35 min or until done
