Starter

  • 1 cup flour
  • 1 cup water or beer
  1. Mix & leave in warm place, covered
  2. Feed with 1 cup of flour & 1 cup of water for 3-5 days or until sour smelling and bubbly.


Bread

  • 1 kg flour
  • 700 ml water (try to get water at body temperature by running tap on underside of wrist until it feels neither hot nor cold)
  • 400g of starter
  • 2 tsp salt
  1. Mix flour, water & starter (but not salt) in a bowl for 15-20 mins
  2. Add salt at the end, cover and let stand for 1-2 hours
  3. Divide into 3 and knead with extra flour on a board and leave to rise again in bread tin or on baking tray with flour.
  4. Preheat oven to 275/300° C
  5. Cook for 35 min or until done
